In our latitudes, there are 2 species of wood grouse: common and stone (another name is long-tailed). The average life span of these birds is no more than 14 years.

Life

It is interesting that females and males live separately in ordinary life. They are found only during the breeding season. Capercaillie does not belong to flying birds, it goes around its “possessions” with a quick step or runs around. But if necessary, it can take off on a thick branch (for example, for an overnight stay) and at the same time it will flap its wings loudly.

Mating games for wood grouses take place in late winter – early spring, when the ground is still covered with snow. Interestingly, this ritual over the years can take place in the same specific place in the forest, where all the females and males that live in the vicinity flock to.

After mating, the female leaves the clearing and begins to look for a suitable place for the nest. In April-May, she lays 5-12 eggs, of which chicks appear after 25-27 days. They live with their mother until September, then they begin their adult life separately.

The first stage of bird preparation is the removal of feathers and offal. The liver, heart and stomach can be preserved (they can also be used to make delicious meals). Add a little fat under the skin of a bird that has been cleaned, washed and wiped with paper towels. You can use lard or bacon slices for this. After that, grate the carcass with seasonings both on the outside and on the inside.

In this form, the wood grouse can already be sent to the oven for baking. But before, to give a neat shape, tie with threads. The clear juice flowing from the carcass will tell about the readiness of the meat. Before serving the ready-made capercaillie leave to “rest” (wrap in foil for a few minutes).
