Mature specimens must be cleaned of hard peel and seeds so that they do not taste bitter in salting. The salting time of old zucchini is different, so it is better not to mix them together with young ones.

  1. Wash all products well, peel the garlic.
  2. Cut vegetables into long slices or circles.
  3. Cover the bottom of the dish with half of the herbs and spices, except for the garlic.
  4. Divide the chopped vegetables into two parts and put one on the greens.
  5. Squeeze half of the garlic cloves over the zucchini with a garlic press.
  6. Cover with horseradish.
  7. Carefully place the second part of the vegetables.
  8. Squeeze the garlic on top and lay out the remaining ingredients.
  9. Cover all contents with horseradish.
  10. Prepare the brine – dissolve salt and sugar in water (1,5 l) and boil.
  11. Immediately pour the brine into the pan so that the contents are completely covered. To cover with a lid.
  12. When cool, put in the refrigerator.
  13. A day later, the zucchini is ready.

  2. Cut the zucchini into slices, and the horseradish root into small pieces.
  3. Spread vegetables in layers, shifting greens.
  4. Boil water with salt, cool and pour the contents of the pan with it.
  5. A container with this pickle should stand in a cold place (cellar or basement) for 20-25 days.
  6. During this period, salt water will need to be added (1 g of salt per 20 liter of water) to cover the contents.

Useful Tips

When preparing salted zucchini, you need to consider a few important points:

  1. For salting, you should take only fresh fruits. Stale ones will not turn out crispy.
  2. Ripe vegetables can also be salted, but the salting time will be longer than indicated in the recipes.
  3. For greater spiciness, 0,5–1 pod of red pepper can be added to each of the recipes, after peeling it from seeds and cutting into pieces.
